A reader wants to know how she can keep ginger without it going mouldy.

You can store fresh ginger root, unpeeled and sealed tightly with a layer or two of plastic wrap, in the refrigerator crisper for up to three weeks.

You can also freeze ginger. In that case, wrap as above then seal in a plastic bag and freeze for up to one year.
