A reader wants to know the difference between canned "crushed" tomatoes and "pureed" tomatoes. We would take pureed tomatoes to be tomato paste, which is tomatoes that have been reduced until they are very thick. Crushed tomatoes (also labelled as "ground" tomatoes), have also been pureed and reduced until they are smooth and saucelike.
